Coconut Masala Powder

  Thengai Podi  or South Indian Coconut Masala Powder  is a ready to eat masala based on coconut  in the South Indian kitchen, this spice adds a tropical, nutty twist to dosa, idlis and plain rice. Its unique combination of roasted coconut and spices makes it both aromatic and delicious to use.

Instructions:

  1. Roasting the dry items:  
    • Take a pan and dry roast the chana dal until it is lightly golden brown. 
    • In a separate pan, toast the grated coconut until it is aromatic.
    •  Roast dried red chilli and cumin seeds until they release their aroma. If using dried garlic, roast it with chilli.
  2. Grind:  
    • Once all the ingredients have cooled, grind them with asafoetida and salt until you receive your desired consistency - coarse or fine.
  3. Serve:  
    • This spice powder used as as a topping  with dosa, idlis or rice
    • Add a little ghee or oil for additional taste .

 Tip: 

  • Experiment with the baking time of each ingredient to customize the intensity of your mixture.
