Ingredients
- Fish: 500g fish
- Onion: 2 medium (finely chopped)
- Tomatoes: 2 medium
- Garlic paste: 1 tablespoon
- Ginger paste: 1 tablespoon
- Coconut Milk: 1 cup
- Turmeric powder: 1/2 tsp
- Red chilly powder: 1 tsp
- Coriander Powder: 1 tsp
- Cumin powder: 1 tsp
- Mustard seeds: 1/2 tsp
- Curry leaves: 8-10
- Oil: 3 tablespoons
- Salt: to taste
- Water: 1 cup
- Fresh coriander leaves: for decoration
Instructions
- Prepare the fish: marinate parts of the fish with a pinch of turmeric and salt. Set aside for 15 minutes.
- Sauté Aromatics: Heat the oil in pan and add mustard seeds. Once they are splashed, curry leaves, garlic paste and ginger paste. Stir until aromatic.
- Cooking the onions: Add the chopped onion and stir until golden brown.
- Add spices: Turmeric, red chili powder, coriander powder, cumin powder and stir. Cook for a minute.
- Include tomatoes: Add tomato puree and cook until the oil is separated.
- Simmer: Pour coconut milk and water. Bring a gentle simmer.
- Add fish: carefully place the fish parts in the curry. For 8-10 minutes or cook slowly until the fish is tender.
- Garnish: Sprinkle fresh coriander leaves on top and serve hot with steamed rice or naan.
