Instructions

  1. Besan roasting: 
    •  In a heavy bottomed pan, heat 1 cup of ghee on the medium flame. Slowly add 2 cups of besan. Stir constantly so that the besan roasts evenly without sticking. 
    • Besan is roasted and joyful, nutritious aroma until transformed into rich gold browns. This process can take 15-20 minutes. Here is the patience - each stirring is more of a different taste note.
  2. Pouring taste:  
    • Once your basin is completely roasted, reduce the flame and mix in a spoon of cardamom powder with chopped almonds.
    • Stir for an extra minute to allow the flavors to merge.
    1. Mix in sweetness:  
      • Remove the pan from the heat. Allow the mixture to cool down a bit so that it is warm to touch but not very hot.
      •  Add 1 cup of powdered sugar and mix well with hands for the sugar to evenly distributed in the mixture.
    2. Shapes Lados: 
      • When the mixture is still warm and soft, take a small piece with your hands and shape it in neat, rounded balls. Continue until all the mixture is used.
      •  If using raisins, press a few gently on the top of each ladoo for decoration.
    3. Serving and Storing:
      •  Let your Ladoos cool completely. As they arrive at room temperature, their creation will be firm. 
      • Store them in an airtight container. They can stay fresh if they are refrigerated for up to a week or refrigerated.

    •  Check consistency: If you think the mixture is too dry (add one extra spoon or two of ghee.) The composition should be sufficiently moist to be tightly tied when the roll is done.
