Ingredients

  •  2 tablespoons coriander seeds
  •  1 tablespoon cumin seeds
  •  1 tablespoon red chili powder (adjust to your spice preference)
  •  1 teaspoon turmeric powder
  •  1 teaspoon garam masala
  •  1/2 teaspoon black peppercorns
  •  1/2 teaspoon cardamom pods (green or black)
  •  1/4 teaspoon cloves
  •  1/4 teaspoon cinnamon stick

Instructions

  • Dry Roast the Spices: Heat a heavy-bottomed pan over medium heat. Add the coriander seeds and cumin seeds. Dry roast for 2-3 minutes, stirring constantly, until fragrant and lightly browned. Be careful not to burn them.
  • Grind the Spices: Once cooled, add the roasted spices along with the red chili powder, turmeric powder, garam masala, black peppercorns, cardamom pods, cloves, and cinnamon stick to a spice grinder or mortar and pestle. Grind into a fine powder.
  •  Store: Transfer the masala powder to an airtight container. Store in a cool, dark, and dry place.  It will last for several months.

Tips and Variations

Spice Level: Adjust the amount of red chili powder to your liking. For a milder masala, use less. For extra heat, add a pinch of cayenne pepper.

Other Spices: Feel free to experiment with other spices such as fennel seeds, mustard seeds, or ginger powder to create your unique blend.
